Hi and welcome to The Great Canadian Blog Bash! {#TGCBB} First things first, a huge Canadian thank you to our three lovely hosts: Jennifer from Mom vs the Boys, Nancy from Whispered Inspirations, and Deanna from Maple leaf Mommy. Without their hard work and dedication we would not be enjoying this great coast to coast opportunity!
If this is your first time visiting, my name is Monica, I am a born and bred Maritime girl, live in beautiful southern New Brunswick and this is my third year participating in #TGCBB.
This year I thought I would share a glimpse of life in my neck of the woods, little snippets of spectacular southern New Brunswick, our gorgeous scenery, things to do and a delicious Maritime recipe. And of course, what is a party without presents, so I will also be offering an awesome giveaway!!
This first set of photos are from beautiful New River Beach Provincial Park. To me, one of the most relaxing places on the planet and home to our awesome “Sister’s Getaway”.

The next photos are from spectacular Fundy National Park, it is a little off the beaten track but definitely worth the trip. We try to make it there at least a couple times every summer; it has numerous hiking trails, breathtaking scenery, kayaking, canoeing, four campgrounds, a 9 hole golf course, pool, and several beaches. Another of my favourite places on earth.

{These are my “babies”, canoeing on Bennett Lake. This is where we usually stop for a picnic supper when we are visiting the park on a day trip.}
No visit to the Maritimes would be complete without a decadent seafood feast; this is one of my favourites.
- 500g (1 lb) Linguine pasta
- ⅓ cup butter
- 2 large shallots, finely diced
- 2-3 cloves garlic, finely minced
- 1½ cups whipping cream (35% milk fat)
- ½ cup freshly grated Parmesan cheese
- 2 Tbsp chopped parsley
- 1- 2 lbs. lobster meat or a large can frozen lobster pieces, thawed and broken into pieces
- 12 -15 large scallops, foot removed
- 2 cups frozen, pre-cooked shrimp, thawed
- salt and pepper to taste
- Melt butter in large frying pan.
- Add shallots and saute until clear, add garlic and continue cooking for 1 minute then transfer to a bowl.
- Add more butter if necessary,cook scallops until lightly browned on both sides (approximately 2-3 minutes per side)
- Meanwhile, cook pasta according to package directions, until al dente, drain and reserve ⅛ cup pasta water.
- Add lobster, shrimp, cream and shallots/garlic mixture to pan with scallops.
- Heat over medium/low temperature until cream comes to a low simmer.
- Add Parmesan cheese, salt, pepper and parsley to seafood mixture, keep warm.
- Add cooked linguine and pasta water to seafood mixture, stir and serve immediately.
- *TIP* – Heat dinner bowls/plates and serving bowl

Thanks Leila, it is a gorgeous spot! Tourism is actually quite a large part of our economy, I think you would find lots to see and do it really is very beautiful here. I hope you have a chance to come for a visit.

absolutely love the footprints in the mud from the first picture. I have been out East twice – once as a girl to halifax; the second time in my twenties (again to halifax) but this time we drove – I could not get over the breathtaking scenery on our way through new brunswick. It was amazing

I actually went to University of New Brunswick in Fredericton. I loved it there. The people were so friendly.
One thing I remember about living in NB is all the covered bridges. I’d love to go back and take some pictures now that I have a DSLR. Beautiful scenery.

I’ve only been to New Brunswick once and it was for work so I definitely plan to bring the lil one over soon and visit! After all it’s where my mother in law hails from!!
