Traditional Roast Turkey with Apricot & Pecan Stuffing

The upcoming holiday season is by far, my favourite time of the year. And, I think the word “season” describes it perfectly, because the holidays are so much more than just a single day. This seems the only time of the year that we all share a joint purpose. It’s like some unwritten contract that we have all signed, promising to be more charitable, appreciative, tolerant and most of all, nicer to each other.

It’s funny, but when I think about the holidays, my thoughts are never about gifts, either given or received. My fondest memories always centre on things like family gatherings, seeing old friends, baking, cooking and the delicious smells permeating every nook and cranny.

Our kids are older now and one of the traditions I love the most is us all gathering in the kitchen to prepare meals. There is always lots of fun and laughter and with everyone pitching in, all the little tasks are easy and before you know it our amazing dinner is on the table.

 Roast Turkey One of our favourite dinners to make together is a huge traditional roast turkey. Let’s face it, you can never go wrong with roast turkey. A whole turkey is easy to make and an excellent choice for holiday parties, family get-togethers, celebrations and holiday meals.

A Classic Roast Turkey with all the trimmings will steal the show at any celebration or gathering.  Turkey is such a versatile choice, pairing well with many different flavour profiles, spice blends, seasonings, stuffings, and glazes.

Traditional Roast Turkey with Apricot and Pecan Stuffing

Serves: 8-12
Ingredients
  • For turkey:
  • 1 whole turkey, 12-14 lbs.
  • 4 tbsp olive oil
  • 1 cup white wine
  • 1 cup turkey broth
  • For rub:
  • 2 tbsp salt
  • 1 ½ tbsp white pepper
  • 1 tbsp garlic powder
  • 2 tbsp ground Italian seasoning
  • 1 tbsp ground sweet paprika
  • For stuffing:
  • 3 cups crusty bread such as sourdough or Italian, cubed
  • 1 tbsp olive oil
  • 1 cup roughly chopped dried apricots
  • ½ cup rolled oats
  • ¾ cup turkey broth
  • 1 medium onion, diced
  • 3 stalks celery, diced
  • Salt and pepper to taste
  • 1 tsp dried sage
  • 1 tsp dried thyme
Instructions
  1. Prepare Turkey:
  2. Make sure the turkey is thawed and giblets and neck have been removed.
  3. Preheat your oven to 350°F.
  4. Pat the bird dry with paper towels.
  5. Rub the turkey with olive oil, inside and out.
  6. Combine all spices to make a rub. Sprinkle generously onto the bird, inside and out.
  7. Stuff the turkey, loosely, with stuffing mixture.
  8. Place the bird into your roasting pan. Add wine and broth.
  9. Roast the turkey for 4 – 4 ½ hours, until the juices run clear and an instant thermometer reads 170°F in the breast, 180°F in the thigh and the stuffing reaches 165°F.
  10. Remove the turkey from the oven and let it rest for at least 20 minutes before carving.
  11. NOTE: Cooking times are for planning purposes only – always use a digital meat thermometer to determine doneness.
  12. Prepare Stuffing:
  13. Spread the bread cubes out on a baking tray and place in your oven overnight to dry out.
  14. Place in a large bowl.
  15. Heat olive oil in a frying pan over medium heat.
  16. Add onions and celery and sauté until soft, about 5 minutes.
  17. Sprinkle broth over bread to moisten.
  18. Add onion and celery mixture.
  19. Add oats, apricots and dried herbs.
  20. Season with salt and pepper.
  21. Mix well and proceed to stuff your bird.
Notes
Tip: You can make your stuffing on the side!
Place prepared stuffing in a buttered pan and cook for 45 minutes in a 350°F oven until browned and crunchy. Baste with turkey drippings every 15 minutes for added flavour.

Tip: You can change up your stuffing and make it your own!
Here are three alternative combinations for you to try - substitute these ingredients instead of the apricots and pecans:
Dried prunes and slivered almonds
Dried figs and walnuts
Dried cherries and hazelnuts

    If I need ALOT of gravy at the end, I always add a bit of oil and water at the beginning when I start cooking to turn it into yummy juice as it cooks. :D

  200. My tips – always use the bones for broth – freeze the broth in both 1 cup and ice cube trays sizes for variety in using – not all both has to be soup!
