Old Fashioned Peanut Butter Cookies

If you are looking to re-create Peanut Butter Cookies like your grandmother used to make, you know the cookie; a little crunchy on the outside and totally chewy on the inside, then this is the cookie for you! This is a delicious, peanut buttery, old-fashioned cookie like your Grammie would have made. My hubby is a peanut butter cookie fanatic, so I thought this would be a fun cookie to make for him and hopefully it would bring back lots of great childhood memories. This is a very simple … [Read more...]

Chocolate Pudding Dirt Cups

I admit it; when I was thinking about making these Chocolate Pudding Dirt Cups to celebrate Earth Day, I was leaning toward using a packaged pudding.  However, when Music Man went grocery shopping he remembered the worms but forgot the pudding...lol. In the past, I have made pudding from scratch, but it had been a long time. But I did remember that it wasn't difficult so I decided to give it a go! I am so glad the instant pudding never made it home because I had totally forgotten how silky … [Read more...]

No-Bake Chocolate Macaroons {aka Frogs}

I have made the basic recipe for what I know as “Frogs” for as long as I can remember. Many people refer to these cookies as Chocolate Macaroons, but to me, they will always be “Frogs”.  How or why they came to have that name escapes me; they are not green, greenish or frog shaped. What these cookies are, is delicious mounds of chocolate that can be made in a flash using ingredients most of us always have in our kitchen. Nothing exotic or unusual in this cookie, just oatmeal, coconut, … [Read more...]

Raspberry Squares ~ Quick, Foolproof and Delicious!

I first had these Raspberry Squares when a work colleague brought them to a pot-luck dinner. I fell in love with them at first bite. I remember asking right away if she would mind giving me the recipe and if they were difficult to make. She was happy to share the recipe, which was her grandmother's and told me they were super easy to make. That was more than ten years ago now and I have made them ever since. And my colleague wasn't exaggerating when she said how easy these are to make. You … [Read more...]

Glazed Clementine Loaf

It seems that from December through much of the winter, clementines are in abundance. I can't go into my local grocery store without seeing a big display of this tasty, easily peeled fruit. Not only are clementines perfect in lunch boxes or as a midnight snack, they are also the perfect fruit to put in a citrus loaf. I have made my Mom's recipe for Lemon Bread for a hundred years. Not only is it simple to make and delicious, it turns out perfectly every time. My Mom died in January of … [Read more...]

Thick Molasses Cookies

When I was little, I loved when Mom would read me the (in hindsight, rather gruesome) story of Little Red Riding Hood. I loved hearing all about her red hooded cape and how she walked through the forest on her way to Grandma's house. However, my favourite part of that story was the basket filled with the thick molasses cookies that Red Riding Hood was taking to Grandma. In my mind's eye, I can still see mounds of thick molasses cookies tucked into a red and white gingham lined, round … [Read more...]

Dark Chocolate Cookie Butter Blondie Bars

I can hardly believe that in just a few days, Santa arrives! Are you all ready for the big day? I am not! However; somehow, someway, it will all be finished before the 25th. This is such a fun, but busy time of the year. I love to bake and have already made a big batch of Pecan & Cranberry Sandies, as well as a large pan of Christmas themed Hello Dolly Squares. I was looking for one more sweet to have tucked away in the freezer when I came across a recipe in the PC Insiders … [Read more...]

How to Make Peanut Butter Balls

For as long as I can remember, Peanut Butter Balls have been a Christmas tradition in our home. We always make them, often a double or triple batch. Christmas just wouldn't seem the same without them. Back when I was first married, every December, I would spend hours pouring over recipe books and magazines in search of the perfect holiday treats. Then, my mom and I would get together a couple of days before Christmas for an epic, daylong baking session. By the end of the day, we would be very … [Read more...]

Skor Squares ~ Only Four Ingredients!

I first had these super simple to make Skor Squares way back in 2004 or 2005. One of my colleagues would often bring them in to work. We would have them as a little treat with afternoon coffee or just grab one to munch on as we walked past her desk. We all raved about how good they were and she always told us how simple they were to make. Not sure we really believed anything so tasty could be so easy; that is until she brought in the recipe. There are only four ingredients! Only four … [Read more...]

Reverse Chocolate Chip Cookies

If you are looking to shake up your usual chocolate chip cookie recipe, here is a simple little switch.  All I did was take my recipe for Pudding Chocolate Chip Cookies and substituted the vanilla pudding with chocolate pudding and the semi-sweet chocolate chips with white chocolate chips. I have made some version or another of this recipe since I was 12 or 13. They are easy to make, moist, chewy and unbelievably delicious.  Coincidentally, or probably not so coincidentally…as they both came … [Read more...]

Confetti Squares ~ Recipe

A good friend of mine used to make these squares often and I have always liked them. She gave me her recipe and I would often make them when my kids were younger.  Coloured marshmallows + butterscotch chips + peanut butter = happy kids! They are definitely not difficult to make.  Just a little melting of butter, peanut butter and the chips, then letting the mixture cool a bit. Stir in marshmallows, put them in a pan, toss in fridge and you are done! I let the butters/chip mixture cool … [Read more...]

Banana Chip Bread ~ Recipe

Banana Chip Bread is a bit of an easy and yummy variation on a traditional Banana Bread.  Kids and adults alike will love this simple to make and very tasty bread! If you are anything like me, you always have a couple overripe bananas hanging around in a bowl on the kitchen table.  Most banana bread and banana muffin recipes call for three ripe bananas. So, if I have only one or two, I peel them and slip them into a freezer bag, adding to the bag until I get three and then start a new … [Read more...]
