I LOVE to cook and bake so I thought I would do recipes for the A – Z Challenge 2011. They’re all tried, tested and true and I hope you enjoy them!!

Artichoke Dip
1 bottle artichoke hearts
2 large cloves garlic
1/2 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
Drain and squeeze out artichokes. Finely mince garlic. Combine all ingredients and mix well. Put in small ovenproof dish and bake at 350 degrees F. for 20 minutes. Serve with crackers or sliced baguette.

I have never eaten an artichoke. I'll have to have a look in the supermarket. I went googling the image there and I don't know if I've seen one! Here starts a great artichoke hunt!

I've just had my lunch but this sounds good.
I love this dip, I add spinach to mine. I cook it in the microwave, then drain the water off. I then add it as a spread on my turkey club sandwich, turkey, tomatoes, this dip and caramelized onions… I'm hungry, now :)

Growing up, we had a huge artichoke growing in the back garden – no idea how my Mother came to acquire it.
Scared the heck out of us – a giant mutated thistle from Mars was about the kindest thought we had for it.
I've grown quite fond of them since – working out my childhood horrors by eating them.
This looks like a very good way for an artichoke to shuffle off this mortal coil :-)
