A couple of weeks ago Tropical Traditions offered to send me some of their Gold Label Virgin Coconut Oil.
I had heard of coconut oil, but was relatively unfamiliar with it, and had never before used it in cooking. So, I felt a little impartial research was in order.
According to Wikipedia, …”Coconut oil is an edible oil extracted from the kernel or meat of matured coconuts… Throughout the tropical world, it has provided the primary source of fat in the diets of millions of people for generations. It has various applications in food, medicine, and industry. Coconut oil is very heat-stable, which makes it suited to methods of cooking at high temperatures like frying. Because of its stability, it is slow to oxidize and, thus, resistant to rancidity, lasting up to two years due to high saturated fat content.”
I have been searching for an oil to use in high temperature frying and I’ve finely found one. I also like that the oil imparts a very subtle coconut flavour to foods and it’s resistance to rancidity.
