Veggie Burger ~ {Recipe}

Veggie Burger ~ I am not technically a vegetarian, I really don’t eat much beef or pork at all, but I do eat fish, poultry and the odd piece of bacon.

The rest of my family loves a nicely barbecued burger, but, they are definitely not my thing! I always felt a bit “left out” when I just had salad or whatever other side dish we happened to be having.  So, I decided to do a bit of research and came up with this recipe.

If you’re looking for a “burger feel” to your veggie burger, this may not be the recipe for you.  This burger doesn’t have that texture, it is crunchy on the outside but soft and delicate on the inside and the flavour is excellent.

Veggie Burger ~ {Recipe}
 
Serves: 8
Ingredients
  • ⅔ cup large flake oats (not the instant pkgs}
  • 6 cloves garlic, roughly chopped
  • 4 green onions, roughly chopped
  • 1 cup chopped parsley
  • 3-4 tsp. chili powder
  • 2 tsp. oregano
  • 540 ml. can chickpeas, drained
  • 2 eggs
  • ½ tsp salt
  • 540 ml can lentils, drained
  • 1 cup finely diced English cucumber
Instructions
  1. Whirl oats in food processor until ground.
  2. Add garlic, green onions, parsley, chili powder and oregano.
  3. Whirl until finely chopped.
  4. Add chick peas, whirl.
  5. Add eggs, whirl.
  6. Add lentils and pulse just to blend, leave some larger pieces.
  7. Transfer to a bowl and stir in cucumber.
  8. (Depending on the moisture content you could add a couple tablespoons of fine bread crumbs, however, they will be a little sticky)
  9. Cook in non-stick frying pan or barbecue.
  10. If barbecuing, I suggest brushing both sides with olive oil. {You’ll need to handle them delicately as they can easily break apart}
  11. Delicious topped with tzatziki sauce and sliced tomato.

This makes 8 large burgers; I freeze the extras in a container and separate each burger with a piece of parchment.

  1. I’m with you!! I don’t like the big steaks, pork chops, ham or other. I barely tolerate chicken. I do like filleted salmon and have only tried a veggie burger from M & M’s that’s hard to tell from the real thing. (I know, because my BBQing husband mixed them up, and I got the real thing!)

    • I didn’t know M&M’s sold veggie burgers. These are easy to make…hmmm….maybe I’ll bring some on my next camping trip!

  4. Hi Monica – I must confess I LOVE, LOVE, LOVE red meat. Steak is my very favourite food and a bbq hamburger is 2nd on my list. I have tried veggie burgers one time when I was on a cleanse – I liked them hubby did not. I now add some TVP to my hamburger when I’m making hamburgers, meatloaf etc… for the extra healthy kick but have to hide that fact from hubby as if he sees me do it he’ll say – I don’t like them LOL. I’m glad to know you’re not meat eaters because I promise not to cook steak or roast or our usual favs when you come to visit. I like fish too so it’s no hardship but I can’t promise veggie burgers LOL. Maybe I’ll try them on the qt and see what hubby says. We’re not the healthiest eaters in the world and love our red meat.

    Mmmmm, these look very delicious. I must admit, I usually am not a big fan of veggie stuff, but am up for trying anything…..especially if it is on a camping trip!! I enjoy ham, pork, chicken, and of course fish…not shellfish though! I have been making our own hamburgers with lean ground beef. Thanks for the recipe.
