Where I live, in southern New Brunswick, the first week of July usually means its strawberry season. Well for me, strawberry season means it’s time for Strawberry Shortcake!
I know there are many variations on this tasty treat…first there’s the bottom layer; there’s biscuits, white cake, sponge or angel food cake and marianne shells to name a few. Then the berries themselves; whole, sliced, mashed, lots of juice, a little juice or maybe even frozen. Finally the cream; freshly whipped, ice-cream, frozen whipped topping, spray can, or packaged mix.
Here’s my version:
Take freshly baked biscuits,
Split biscuit in two and place in a small serving bowl, add sliced juicy strawberries,
Add a couple dollops of freshly whipped 35% cream {I know, but it’s just once a year! }
Top with more sliced berries and juice and…
…here is the finished result!
- 4 biscuits split in two {from your favourite recipe or you are welcome to use mine}
- 1 qt. fresh strawberries, hulled, washed and sliced into a bowl {for juicier berries sprinkle with 1-2 Tbsp. white sugar
- 1 cup 35% cream whipped with 2 Tbsps of white sugar
- Place split biscuit in bowl, add some berries and juice, whipped cream and top with more berries!
For the biscuits, use your favourite recipe or you are welcome to use mine.

My family loves strawberries. Can’t say they last long enough for me to bake with them. It’s not that they get eaten or go bad, I haven’t baked in 5 years. You can only ask so much of a strawberry!

Sara, you need to give this a try just once before the berries are gone. You don’t need to bake the biscuits, just buy something :)

My mouth is watering just looking at the pictures!!! I have also heard that if it is eaten on a Friday, there are no calories!!! ( or whatever day of the week you choose) It would be more wrong NOT to eat this than to epicurean delight than to eat it!!!
