This is the time of year when every garden, roadside stand, farmer’s market or even your local supermarket is positively bursting at the seams with an abundance of fresh vegetables.
I’m not sure about everyone else in my family, but personally, I would be very happy to have a stir fry, in one form or another, at least once a week. It’s the perfect way to stretch out chicken, beef or pork and it’s easy to load it up with whatever vegetables you have on hand. You could also keep it strictly vegetarian and add firm tofu cubes or toss in a can of lentils or chick peas, this version would be just as yummy!
I like to mix up the rice a bit too…sometimes brown and/or wild rice, a flavoured rice or basmati rice, my husband does prefer a simple, boxed white rice…but, where is the fun in that?
I know many people use fancy sauces but for several years now we’ve just been flavouring our stir frys with a low fat Italian dressing and a little soy sauce and let me tell you, it is delicious.

We too love stir fry. It’s so easy to make and as you say, with the amount if vegetables available this time of year, it can be so tasty. I will often use whatever vegetables are on hand. I seem to have a lot of zucchini, this time of years, so that goes in along with fresh tomatoes, and of course the regulars, carrots, onions,broccoli, green , yellow peppers & snow peas. I have a teriyaki sauce we usually use and serve with wild rice. but the Italian dressing with soy sauce it something we’ll try, too. Your photo looks so yummy!
