As some of you may recall, I am a muffinaholic!! I am totally addicted to making muffins and will often make them several times a week! {I’m also addicted to coffee…so I’m guessing these are companion addictions..lol}
As it is the Canadian Thanksgiving week-end I thought I would share this delicious recipe with you. I made them earlier in the week…I’m going to call that a trial run as I’m also going to make them tomorrow morning, they are that good!!
I hope you enjoy these muffins and wishing everyone a happy and safe Thanksgiving!
- 2 eggs
- 1 cup white sugar
- ¾ cup vegetable oil
- 1 cup canned PURE pumpkin
- 1½ cups flour
- ¾ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup raisins {optional}
- ½ cup chopped walnuts {optional}
- Beat eggs until pale yellow in colour, add sugar, oil, pumpkin and beat until well blended.
- Combine dry ingredients and mixing by hand, add to wet.
- Stir gently until combined.
- Do not over mix or muffins will be tough.
- Stir in raisins and/or walnuts {If using}.
- Spoon into 12 greased muffin cups and lightly sprinkle tops with brown sugar.
- Bake in 375 degree F. oven for 15 - 20 minutes or until toothpick inserted in centre comes out clean.
- Cool on wire rack and enjoy!

just double checking, by “canned PURE pumpkin” you mean canned pumpkin flesh/meat as opposed to puree?

Hi Wayne, correct by pure I mean canned flesh/meat with nothing added. {NOT a canned pie filling} Good luck with them, they’re delicious!

This looks so delicious and would go so well with the Reunion Island Pumpkins Spice coffee. I’ve already copied the recipe, but can’t imagine mine turning out as good as this one looks.
