Carrot Cake ~ The Perfect Dessert for Easter!

This dense and delicious carrot cake is the perfect dessert for Easter dinner.  I cannot count how many times I have been asked for this recipe, it is that good!

Ingredients
  • 2 cups flour
  • 2 tsp. baking powder
  • 1½ tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 cups white sugar
  • ½ cup chopped walnuts
  • 1½ cups vegetable oil
  • 4 eggs
  • 2 cups finely grated carrots
  • 1 - 398ml. (14 ounce) can crushed pineapple - well drained
  • 1 cup coconut
  • CREAM CHEESE ICING -
  • 250g (8 ounces) cream cheese - softened
  • ½ cup butter - softened
  • 2 tsp. vanilla
  • 4 cups icing (confectioners) sugar
Instructions
  1. In a large bowl sift together the first five ingredients.
  2. Add sugar, oil, eggs and mix well.
  3. Blend in the carrots, pineapple, nuts and coconut.
  4. Makes 2 (high sided) 9" round cakes
  5. If using an 8" round, simply pour any extra batter into a loaf pan, bake and freeze for future use.
  6. Bake at 350 degrees F. for approximately 60 minutes, check often as times will vary depending on pan size .
  7. FROST WITH CREAM CHEESE ICING -
  8. Beat softened cream cheese, butter and vanilla well.
  9. Add sugar gradually and continue beating until fluffy
  10. Spread over cooled cake.

    Did you just use a fork to get the basket looking effect on the cake? I am going to try this cake although I’m a horrible artist!

    • Hi Laura, yes that is all I used and then I had a little plastic piping tube that you can get in most grocery stores and piped around the edge. I put some green food colouring in a baggie with coconut for the nest and then added the Cadbury chocolate eggs to the top. It was very simple and fun to do! Good luck with it Laura and if you can, send me a photo, I would love to see how it turned out.

  4. This cake looks delicious!! Just wondering what the temp of the oven should be and approx how long does it take to bake? Thanks!

    • Hi Lisa,

      Whoops…I guess that is important information to include….thank you so much for letting me know! It bakes at 350 degrees F for approximately 60 minutes but keep checking and use a toothpick inserted and when it comes out clean it’s done. This makes 2 really large rounds,if your pans don’t have sides that are fairly high put the excess in a few muffin cups (they won’t take nearly as long, I would guess 20 – 30 minutes, but like with the cake, check them often.

    Looks like it will turn out to be a great recipe….I am very glad I watched it bake closely, because it was done in 40 minutes! (and I used the 9inch rounds)

    • It is a tricky cake in that respect isn’t it Kathleen, you have to watch it like a hawk! Hope you love the cake and that you are having a great Easter!

    • I am so happy you loved it Courtney, and I bet your’s was just as pretty if not prettier! I mixed it up this Easter and made the same recipe but in cupcakes…it made 18 cupcakes and it took them about 25 min. to bake, they were awesome too!
