Cranberry Pistachio Bark ~ A Little Piece of Heaven!

The first time I had this little piece of heaven on a plate, that is Cranberry Pistachio Bark, I fell totally in love!  It was about 15 years ago and a colleague of mine had brought in a tin of this luscious ambrosia during the holidays.

After stuffing  a couple (OK, a few) pieces of this food of the gods into my mouth I knew I needed to have the recipe. Thankfully, my kind co-worker readily agreed and quickly gave me the recipe from memory.  Yes, it is that easy that you really don’t even need much of a recipe!

All you need is three ingredients –

  • High Quality White Chocolate
  • Dried Cranberries
  • Shelled Pistachios

Cranberry Pistachio Bark

While the number of ingredients is very small, the cost is relatively high, but worth every nickle!  I usually always have a large bag of dried cranberries on hand, I use the Ocean Spray brand and I pick up the nuts and the shelled pistachios at the bulk barn.

For the white chocolate I use Belgian chocolate wafers and for the pistachios, look for shelled and unsalted.  Expect these two ingredients in the quantities I have listed to be approximately $20.00. But like I said earlier,  it is a bit of a splurge but you only make it once a year and this bark is truly worth every penny!

{No need for a fancy double boiler, I actually prefer to use a glass bowl and melt the chocolate over simmering water.  Don’t allow the water to boil, you don’t want any steam or water in your chocolate, as water can cause your chocolate to seize or split.}

{Gently stir chocolate until it is smooth, luscious and creamy.}

{Add roasted, chopped pistachios and cranberries to the white chocolate.}

{Spread mixture on sheet pan and refrigerate until cold and firm.  Then, break bark into pieces and store in the fridge in a covered container.}

Cranberry Pistachio Bark
Recipe type: Dessert
  • 3 - 4 cups good quality chocolate (I use Belgian chocolate)
  • 1 cup dried cranberries
  • 1 cup shelled pistachios
  1. Melt chocolate in the top of a double boiler or place a large glass bowl over simmering water.
  2. Let chocolate cool to room temperature.
  3. Place shelled pistachios in a single layer on a sheet pan or cookie sheet and roast at 350 degrees F. for 6 - 8 minutes.
  4. Set nuts aside to cool.
  5. Roughly chop.
  6. Stir cranberries and pistachios into melted chocolate and mix well to combine.
  7. Pour onto parchment lined 10 inch x 15 inch sheet pan or cookie sheet.
  8. Refrigerate at least one hour, then break into pieces.
  9. Makes about 2 pounds of bark.
