A good friend of mine used to make these squares often and I have always liked them. She gave me her recipe and I would often make them when my kids were younger.

 Coloured marshmallows + butterscotch chips + peanut butter = happy kids!

They are definitely not difficult to make.  Just a little melting of butter, peanut butter and the chips, then letting the mixture cool a bit. Stir in marshmallows, put them in a pan, toss in fridge and you are done!

I let the butters/chip mixture cool for about 40 minutes before stirring in the marshmallows.  However, if you would like a fudgy bottom layer, just wait about 15 – 20 minutes.  Both variations taste great, it’s just a matter of personal preference.

These freeze beautifully.  Just refrigerate to firm up the mixture, cut into squares, wrap well (separating layers with waxed paper) and freeze.

Just put the butter, chips and peanut butter in a large saucepan.

Make sure everything has melted and the mixture is very smooth.

When you can easily hold your hand on the bottom of the pan (be careful, it will be very hot when first removed from heat), add the marshmallows.

Once thoroughly combined, pour the mixture into a parchment lined baking dish.

  • ½ cup butter
  • 1 cup peanut butter
  • 250 grams of butterscotch baking chips
  • 250 grams of coloured marshmallows
Instructions
  1. Put butter, peanut butter, and butterscotch chips in a large saucepan.
  2. Melt over medium heat, stirring constantly until the mixture is smooth.
  3. Remove from heat and allow the mixture to cool until you can comfortably put your hand on the bottom of the pan. (In the size pot I used it took about 30-40 minutes.)
  4. This cooling step is important if you like the peanut butter butterscotch to be evenly distributed throughout the marshmallows. Otherwise a thick fudgy layer will settle at the bottom of the pan with the marshmallows on the top.
  5. Add marshmallows and stir well to evenly coat.
  6. Pour into a parchment lined 8"x8"x2" or 9"x9"x2" pan and spread mixture evenly in pan.
  7. Put the pan of goodies into refrigerator until cold and set. (3-4 hours)
  8. Remove from the fridge and flip the squares onto a cutting board,
  9. Remove parchment and flip squares right side up.
  10. Cut into squares.
  11. If storing/freezing, separate layers with waxed paper.

    I found your recipe yesterday and made them. Everything worked well. The sauce melted quickly and we were able to pour it over the marshmallows prety much right away. However, a bag of marshmallows is 200 grams and when we poured the sauce over 400 grams of marshmallows there wasn’t enough. We made another batch of sauce and poured it over the pan of mashmallows. Your marshmallow ratio is off. Change to 200 grams.

    • I rechecked my original recipe and it did call for the bigger 400 gm bag. Maybe the butterscotch to marshmallow ratio is different with the bigger bag. Fewer marshmellows equals more butterscotch which is always a good thing! thanks so much for the heads up Lori
