After a fairly mild, but still very long winter, if I cautiously peek around the corner I can see spring finally making her way toward us.
I can barely wait to shed my winter clothes, put out the patio furniture and start digging in the garden. for me, spring is always a hopeful time of year. It holds the promise of long hours of daylight, warmer temperatures, barbecues, hiking and finally being able to get out of the house without twenty layers of clothing!
I’m also trying to shed some of my winter hibernation weight. A couple of days ago, I was searching for some nutritious recipes on the PC® website and hit the jackpot with the PC® Insiders Collection for Spring. They have all kinds of great recipes for every occasion and I happily spent a couple of hours browsing them all!

It’s that easy (and it also explains why I was there for more than two hours…lol) …and they even have an easy to CREATE SHOPPING LIST FOR YOUR for all your recipe selections.
Lately, I have become a little obsessed with “Smoothie Bowls”, so when I saw the recipe for a Strawberry Kiwi Smoothie Bowl, I knew I had to try it!
- ¾ cup (175 mL) PC Organics Plain Kefir
- 1 tbsp (15 mL) PC Organics Agave Syrup
- 2 cups (500 mL) PC Strawberry, Kiwi, Banana Fruit Blend
- ⅓ cup (75 mL) PC Organics Honey Almond Granola Cereal
- 3 tbsp (45 mL) shredded unsweetened coconut
- 1 tsp (5 mL) PC Organics Chia Seeds
- Place kefir, syrup and frozen fruit blend in the blender.
- Blend for a few seconds.
- *You may have to turn the machine off and push fruit toward the centre in order for the blade to capture the fruit.
- Remove lid and scrape down sides.
- Repeat until mixture is evenly thick and creamy.
- Divide mixture among four bowls.
- Top with cereal, coconut and seeds.
Per serving: 140 calories, fat 5 g, sodium 35 mg, carbohydrate 21 g, fibre 3 g, protein 4 g. Source of fibre
You can easily make this delicious recipe in the middle of winter because tropical fruit is in season all year round thanks to this ripe, juicy frozen blend. Unlike fresh fruit, there’s no prep required, so you can instantly add some to smoothies and milkshakes or top your cereal, yogurt and ice cream. For a tasty treat, blend fruit with yogurt or kefir and freeze on sticks for homemade freezer pops.
On a little bit of a sidenote, I wanted to bring your attention to a new product line that I recently discovered – Naturally Imperfect.
A few weeks ago I was making a pie and was at the store to pick up a bag of apples when I saw a bag labelled Naturally Imperfect. I looked the bag over and except for a little blemish or bump they looked perfectly fine to me, so I thought, what the heck, it’s just a pie. So I gave them a try.
We have used them ever since, and not just for pies. I have kept a bowl of the apples on the table and also have added them to lunch bags…not one person in the family noticed any difference!
Right now in the Atlantic region we just have the apples in this line, but the plan is to expand soon to other produce. The line started last year in Ontario and Quebec with a limited selection, (apples and potatoes only) but there they have since expanded to include mushrooms, peppers, carrots, onions etc.
Some expansion is expected for the Atlantic Region within the next year. So far the consumer response has been very positive across the country so, I expect the line to continue to grow.
To me, this is a no-brainer. I still get a great product but at bargain price!
