Hands up, who loves coffee cake? Maybe an easier question would be, who doesn’t love coffee cake! For me, there is nothing quite as homey and cozy as curling up with a steaming cup of coffee and a small…okay, okay…a big slice of homemade coffee cake.
What I really like about this coffee cake loaf, besides the amazing taste, is the manageable size. It’s not a huge cake that will be constantly tempting me for days on end. The loaf size is a bit smaller than a cake and once cooled (before adding icing drizzly), could easily be sliced in half and frozen for future coffee dates!
- Loaf -
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1½ teaspoons cinnamon
- 1¼ teaspoons salt
- 1 cup packed brown sugar
- 2 large eggs
- 1 cup buttermilk
- ⅓ cup vegetable oil
- 2 teaspoons vanilla
- Topping/Filling -
- ⅔ cup packed brown sugar
- 1½ teaspoons cinnamon
- 3 Tablespoons butter, melted
- Icing Drizzle -
- ½ cup Icing Sugar
- 2 teaspoons milk (or a little more, if necessary)
- Preheat oven to 350 degrees Fahrenheit
- Grease or spray a 9”x5”x3” loaf pan, set aside.
- Topping/Filling -
- In a small bowl, using your fingers or a fork, combine brown sugar, cinnamon, and melted butter. Set aside.
- Loaf -
- In a large bowl; combine flour, sugar, baking powder, cinnamon, and salt. Whisk to mix.
- In another bowl, combine the eggs, buttermilk, oil, and vanilla.
- Add these wet ingredients to the flour mixture and stir just until all of the flour mixture is moistened and the mixture is smooth.
- Pour half the batter into a greased loaf pan.
- Sprinkle with half of the Topping/Filling
- Spoon remaining batter over the Topping/Filling.
- Top the batter with remaining Topping/Filling.
- Bake for 55-60 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 15 minutes before removing from pan to a wire rack to cool completely.
- Icing Drizzle -
- Add icing sugar to a small bowl. Add 1 teaspoon of milk at a time, stirring until a drizzly consistency.
- Using a spoon, pick up some icing and move spoon back and forth over loaf to apply icing.

I just tried the Cinnamon Coffee Cake Loaf & just tested it, really good..delicious! I have been making a Sour Cream Cinnamon Coffee Cake in a bundt pan but it always seems too much at one time! I have been making it for years! Well your Cinnamon Coffee Cake Loaf is my new favourite! I would rate this loaf as a 5 star!!!
