Even though it is “officially” spring, as I gaze out my kitchen window, the ground is covered in a white, snowy, winter blanket. However, I know the springlike weather will soon arrive and I am not going to allow this year’s lack of green grass, robins and spring flowers to dampen my enthusiasm for any planned celebrations.

Making plans for Easter? Why not consider making a roast turkey the centerpiece of your meal. Instead of choosing a baked ham or a prime rib roast, why not reach for a whole turkey when you visit the grocery store? Turkey is a much healthier choice, and far leaner than a ham or prime rib. Choosing Canadian turkey allows you to make a lighter and healthier choice while still creating a satisfying and show-stopping meal. A classic roast turkey will economically feed a crowd and provide a variety of cuts to satisfy everyone’s individual preferences. Break it down on a person-by-person basis, and you will be surprised at how inexpensive it can be! Both white and dark meat is lean, so you can feel good knowing you are serving a tasty and delicious meal that is also a light and healthy option. It is the perfect mealtime solution for all your upcoming family occasions and get-together!

Turkey Veggie Pasta

Canadian turkey is also surprisingly easy to prepare. There are only a few basic and easy steps to ensure a perfectly cooked, moist and juicy dinner. You can certainly get a little more creative with different stuffing recipes, rubs, and marinades, but if you are short on time or not that confident in the kitchen, a basic recipe of seasoning and olive oil does the job. A busy cook will love how easy it is to prepare a whole turkey – just prep and season it and then let your oven do the work! With the addition of some rice or potatoes and a few vegetable side dishes, you have a complete meal that will impress all your guests.

The other huge benefit to choosing turkey as your centerpiece is that it allows you to plan for leftovers. Canadian Turkey knows that leftovers can be life savers! Just two pounds of extra turkey meat is all you need to have a ready-to-go meal starter on hand. Planning for extra turkey means planning for extra meals, cooked all at once and stored in the freezer. That makes for easy weeknight dinners when the time is short. Even if you’re cooking for a small group, you can take advantage of cooking with leftovers in mind, so that you cook once and eat twice (or more!). Turkey Veggie Pasta

Three to four cups of leftover meat can be the perfect base for a large variety of meals. Turkey freezes exceptionally well, too. Freeze 3 – 4 cups of leftover meat in individual freezer bags to have instant meal starters on hand – just defrost in the refrigerator the night before. These freezer meal starters can make a great base for soups, salads, grain bowls, chilis, casseroles, and pastas. Turkey pairs well with different flavours and spices, so you can modify any basic recipe and create a number of different meals.

Serves: 4
Ingredients
  • 2 cups cooked Canadian turkey
  • 1 tbsp olive oil
  • 3 cloves garlic
  • 1 cup diced onion
  • 1 can diced tomatoes (796 ml)
  • 3 cups water
  • 250 gr pasta
  • Salt and pepper to taste
  • 2 cups packed spinach
  • ¼ cup capers
  • ¼ cup sundried tomatoes, chopped
  • 1 tbsp butter (optional)
  • ¼ cup grated Asiago cheese
Instructions
  1. Sauté onion in olive oil.
  2. Add garlic. Sauté an additional 2 minutes.
  3. Add tomatoes, water, salt, pepper, and pasta.
  4. Bring to a boil.
  5. Lower heat to a simmer and cook until pasta is cooked through but still al dente.
  6. Add water along the way if pasta begins to dry out. The liquid will gradually reduce and leave a creamy, thickened sauce. Make sure there is some liquid left in the pan as pasta will continue to absorb until it begins to cool.
  7. In the last few minutes of cooking, add spinach, capers, sundried tomatoes and turkey.
  8. Mix to incorporate.
  9. Remove from heat.
  10. Add butter (for extra creaminess) and cheese.
  11. Serve.
Notes
TIP - Feel free to substitute any vegetables you have on hand for the spinach. Consider substituting with peas, swiss chard, asparagus, mushrooms, or kale.
