English Muffin Breakfast Sandwiches

Many of us have had an English Muffin Breakfast Sandwich at a local drive-thru restaurant. They're super convenient, especially in the car, as they provide a quick, filling breakfast in one small, manageable package. And, the only utensil required is your hand! While I often eat the sandwiches at the drive-thru restaurants when travelling, I much prefer to make them myself when we're home. Making them yourself means you can customize the ingredients, plus they're healthier...well, … [Read more...]

16 Fabulous Apple Recipes

  Is it just me, or did anyone else think this summer flew by at the speed of light? Honestly, I can barely believe that summer will officially be over in just a few days. While I will definitely miss the summer, there are many things about the autumn of the year that I love too.  Cool nights that make it easier to sleep, bright blue autumn skies, getting back to somewhat of a routine, Farmer's Markets bursting with garden bounty, BIG traditional Sunday dinners and of course, my … [Read more...]

Seize Your Poise Moment & Live Life to the Fullest

For the past several summers, my sisters and I, and occasionally our adult daughters, head out for a "girls only" camping trip. The first couple years we stayed in a tent trailer, but then we discovered the "rustic shelters" at a nearby provincial park and have stayed in one of them ever since. When I say rustic, I mean rustic.  The shelter is basically a 14' x 14' wood frame covered in a heavy-duty tarp. A couple of years ago they ran electricity to the shelters, but that is the only … [Read more...]

APPETIZER ~ Loaded Baked Potato Skins

If you are looking for a high impact appetizer, that is delicious, easy to prepare and doesn't cost a fortune, then you need to make these Loaded Baked Potato Skins.  They really couldn't be simpler to make and cost very little. They are very easily customizable too! I often will add some cooked, crumbled bacon, but you could easily add finely diced and seeded tomatoes, peppers or whatever you like to have with your regular baked potatoes. These are the perfect appetizer alone or even … [Read more...]

Our Getaway to New River Beach Provincial Park

For the past ten summers, my sisters and I have gone on a camping/glamping trip to New River Beach Provincial Park. We all have grown kids, many of whom are scattered across the country (and come "home" for summer vacations) so coordinating dates for this trip has always been a bit of a challenge. Naturally, if the "kids" are home, none of us want to lose any of the precious time that we have with them. Some years we have gone on our trip as early as mid-June and this year it was the last … [Read more...]

Blueberry Lemon Bread

  My mom made the best Lemon Bread ever! It was a staple at our house for every family gathering, Christmas, birthdays, wedding and baby shower or if we were expecting "company". This is my mom's hand written recipe and I believe it was passed on to her from her mom, my grandmother. With blueberries being at their peak season right now, I have been busy baking up a blueberry storm! Including Blueberry Sour Cream Muffins, Blueberry Streusel Coffee Cake  and Blueberry Pie. With … [Read more...]

There’s Still Time To Go Camping {w/ Checklist}

When our kids were little, Music Man and I always took them camping a few times every summer. Back in those days we pitched a tent and slept in sleeping bags on the floor. Our luxury item was "bubble pads", think bubble wrap in a large sheet, but there were no air mattresses like we have now.  We have lots of great memories (and some not so great...but we laugh at them now!) from those early days of camping. It's not too late to enjoy some time in the great outdoors! As a matter of fact, my … [Read more...]

Blueberry and Lemon Scones

Here on Canada's East Coast we are in the midst of blueberry season! We're lucky in this part of the world to have thousands of acres of wild blueberries that grow naturally in the acid soils of Atlantic Canada. Blueberries are one of the most popular summer treats of all time. They are sweet, succulent, full of nutrients, and can be eaten freshly picked, as well as, incorporated into a variety of recipes. I have been experimenting with lots of blueberry recipes - Blueberry Sour Cream … [Read more...]

How to Clean & Cook Fresh Mussels {Recipe}

Our son, who lives in Ontario was recently home for a nice long visit. Although he loves to do lots of fun things while home, such as our trip to the Fundy Trail, one of his favourite things is to have some local seafood, like fresh mussels. If you're not familiar with mussels, it's the common name used for members of several families of bivalve molluscs, from saltwater and freshwater habitats. These groups have in common a shell whose outline is elongated and asymmetrical compared with … [Read more...]

Day Tripping on the Fundy Trail, N.B., Canada

Earlier this week we visited the breathtaking Fundy Trail which is located in southern New Brunswick, Canada and is part of the Trans Canada Trail system. This photo was taken at St. Martins beach on the way to the Fundy Trail. We stopped here for a quick visit. The tide is on its way out, but at low tide, you can reach all four huge caves which are located in the background of this photo. It was not our first time visiting the Fundy Trail. My siblings and our families try to get together … [Read more...]

BBQ Turkey Sausage, Potatoes and Vegetable Foil Packs

I love summer!  It's just an entirely different pace than the rest of the year. Even when we're not officially on "vacation", for me, the entire season feels somewhat like a vacation.  Life seems to slow down and the summer vibe is more relaxed. Even though we still eat as nutritiously as possible, preparation and execution are much more laid back in the summer. Think barbecue! Canadians are crazy for BBQ season. And nothing says summer barbeque better than putting juicy, tasty turkey on the … [Read more...]

14 Fabulous Blueberry Recipes

I love the summer. Not only is the weather beautiful but there is always an abundance of freshly picked fruit and vegetables available. Here in Atlantic Canada, strawberry season is nearing the end but the good news is, wild blueberry season is right around the corner! Fresh blueberries are one of the most popular summer treats of all time. They are sweet, succulent, full of nutrients, and can be eaten freshly picked as well as incorporated into a variety of recipes. Wild blueberries grow … [Read more...]

Strawberry Rhubarb Crisp

I have been on a bit of a strawberry rhubarb baking kick these past couple of weeks. But, in my defense, how could I not be? It seems that everywhere I go these early summer fruits are looking at me, begging to be transformed into a delicious dessert, like Strawberry Rhubarb Crisp and so many others. I recently made a Strawberry Shortcake Shortcut which is a quick, delicious and easy take on the original and an amazing Strawberry Rhubarb Galette. (Which I may have had more than two pieces … [Read more...]
