A good friend of mine used to make these squares often and I have always liked them. She gave me her recipe and I would often make them when my kids were younger.
Coloured marshmallows + butterscotch chips + peanut butter = happy kids!
They are definitely not difficult to make. Just a little melting of butter, peanut butter, and the chips, then letting the mixture cool a bit. Stir in marshmallows, put them in a pan, toss in the fridge and you are done!
I let the butters/chip mixture cool for about 40 minutes before stirring in the marshmallows. However, if you would like a fudgy bottom layer, just wait for about 15 – 20 minutes. Both variations taste great, it’s just a matter of personal preference.
These freeze beautifully. Just refrigerate to firm up the mixture, cut into squares, wrap well (separating layers with waxed paper) and freeze.
Only four ingredients in these easy to make squares that the kids will adore and the adults will like them too!
Just put the butter, chips and peanut butter in a large saucepan.
Make sure everything has melted and the mixture is very smooth.
When you can easily hold your hand on the bottom of the pan (be careful, it will be very hot when first removed from heat), add the marshmallows.
Once thoroughly combined, pour the mixture into a parchment lined baking dish.
PIN IT – Confetti Squares
- ½ cup butter
- 1 cup peanut butter
- 250 grams of butterscotch baking chips
- 250 grams of coloured marshmallows
- Put butter, peanut butter, and butterscotch chips in a large saucepan.
- Melt over medium heat, stirring constantly until the mixture is smooth.
- Remove from heat and allow the mixture to cool until you can comfortably put your hand on the bottom of the pan. (In the size pot I used it took about 30-40 minutes.)
- This cooling step is important if you like the peanut butter butterscotch to be evenly distributed throughout the marshmallows. Otherwise, a thick fudgy layer will settle at the bottom of the pan with the marshmallows on the top.
- Add marshmallows and stir well to evenly coat.
- Pour into a parchment lined 8"x8"x2" or 9"x9"x2" pan and spread mixture evenly in pan.
- Put the pan of goodies into the refrigerator until cold and set. (3-4 hours)
- Remove from the fridge and flip the squares onto a cutting board,
- Remove parchment and flip squares right side up.
- Cut into squares.
- If storing/freezing, separate layers with waxed paper.
