Cranberry Pistachio Bark
Recipe type: Dessert
  • 3 - 4 cups good quality chocolate (I use Belgian chocolate)
  • 1 cup dried cranberries
  • 1 cup shelled pistachios
  1. Melt chocolate in the top of a double boiler or place a large glass bowl over simmering water.
  2. Let chocolate cool to room temperature.
  3. Place shelled pistachios in a single layer on a sheet pan or cookie sheet and roast at 350 degrees F. for 6 - 8 minutes.
  4. Set nuts aside to cool.
  5. Roughly chop.
  6. Stir cranberries and pistachios into melted chocolate and mix well to combine.
  7. Pour onto parchment lined 10-inch x 15-inch sheet pan or cookie sheet.
  8. Refrigerate at least one hour, then break into pieces.
  9. Makes about 2 pounds of bark.
