Cranberry Orange Bread

  • LOAF
  • 1 cup white sugar
  • ½ cup of softened butter
  • 2 eggs
  • ½ cup sour cream
  • 1½ cups flour
  • 2 tsp. baking powder
  • ¼ tsp salt
  • 1 cup chopped cranberries (fresh or frozen)
  • zest of one large orange
  • ⅓ cup white sugar
  • Juice of one large orange
  1. LOAF
  2. Preheat oven to 350F. Spray a 8 x 4-inch loaf pan with cooking spray, or grease and flour the pan; set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in the eggs.
  5. Stir in the sour cream.
  6. In a separate bowl combine the flour, baking powder, salt, chopped cranberries, and zest. Stir to combine and to coat fruit with flour mixture.
  7. Gradually stir flour mixture into creamed mixture. Mixing gently after each addition until just combined. Don't overbeat.
  8. Pour into loaf pan. Bake for 50 - 60 minutes or until a toothpick inserted near the center comes out clean.
  9. GLAZE
  10. In a small pot or microwaveable bowl heat orange juice, pour in sugar and stir to dissolve sugar.
  11. Spoon mixture over baked bread while bread is still warm.
  12. Let cool 30 minutes before slicing.
