Chocolate Walnut Ice Box Cookies

  • ¾ cup butter, softened
  • 1 cup white, granulated sugar
  • 1 large egg
  • 1 tsp. vanilla
  • 3 ounces pure unsweetened chocolate squares, melted
  • 2½ cups flour
  • 1½ tsp. baking powder
  • ½ tsp. salt
  • 1 cup chopped walnuts
  1. Cream butter and sugar together until light and fluffy. Add egg, vanilla and melted chocolate, beat well to combine, scraping down the sides of bowl as necessary. Sift together flour, baking powder and salt, add to mixture and stir to combine. Add chopped walnuts and stir to combine.
  2. Remove dough from bowl and bring the dough together, divide in half. Place each half on a sheet of plastic wrap and shape into a 2”-3” diameter log. (You can use the plastic wrap to help you shape the log.) Wrap each log in plastic wrap and chill for at least 4 hours, preferably overnight. To bake, cut the log into ¼ inch slices and place on parchment-lined baking sheet.
  3. Bake in a 375 degree F. oven for approximately 8-9 minutes.
