Cinnamon Coffee Cake Loaf
  • Loaf -
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1½ teaspoons cinnamon
  • 1¼ teaspoons salt
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 cup buttermilk
  • ⅓ cup vegetable oil
  • 2 teaspoons vanilla
  • Topping/Filling -
  • ⅔ cup packed brown sugar
  • 1½ teaspoons cinnamon
  • 3 Tablespoons butter, melted
  • Icing Drizzle -
  • ½ cup Icing Sugar
  • 2 teaspoons milk (or a little more, if necessary)
  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease or spray a 9”x5”x3” loaf pan, set aside.
  3. Topping/Filling -
  4. In a small bowl, using your fingers or a fork, combine brown sugar, cinnamon, and melted butter. Set aside.
  5. Loaf -
  6. In a large bowl; combine flour, sugar, baking powder, cinnamon, and salt. Whisk to mix.
  7. In another bowl, combine the eggs, buttermilk, oil, and vanilla.
  8. Add these wet ingredients to the flour mixture and stir just until all of the flour mixture is moistened and the mixture is smooth.
  9. Pour half the batter into a greased loaf pan.
  10. Sprinkle with half of the Topping/Filling
  11. Spoon remaining batter over the Topping/Filling.
  12. Top the batter with remaining Topping/Filling.
  13. Bake for 55-60 minutes or until a toothpick inserted near the center comes out clean.
  14. Cool for 15 minutes before removing from pan to a wire rack to cool completely.
  15. Icing Drizzle -
  16. Add icing sugar to a small bowl. Add 1 teaspoon of milk at a time, stirring until a drizzly consistency.
  17. Using a spoon, pick up some icing and move spoon back and forth over loaf to apply icing.
