Cranberry Pistachio Bark

  • 1 pound good quality white chocolate (I use Belgian)
  • 1 cup dried cranberries
  • 1 cup shelled pistachios
  1. Melt chocolate in the top of a double boiler. Let cool to room temperature.
  2. Roast pistachios at 350 degrees F. for 5 - 7 minutes. Set aside to cool. Roughly chop.
  3. Stir cranberries and pistachios into melted chocolate.
  4. Pour and then spread mixture onto a parchment lined 10" x 15" cookies sheet. Refrigerate for at least 1 hour, then break into pieces.
  5. Makes about 1½ pounds.
  6. Store in refrigerator.
