Dough Recipe
Serves: 4-6
  • 3½ cups all purpose flour
  • 1¼ cups warm water {110 - 115 degrees F}
  • 4½ teaspoons dry yeast
  • 3 tablespoons olive oil
  • 1½ tablespoons of liquid honey
  • 2 teaspoons of salt
  1. Warm* the bowl of stand mixer and attach dough hook. To bowl add water, olive oil, honey and yeast. When the yeast has completely dissolved and the mixture is frothy add your flour and then your salt. Mix on med-low until combined and knead on medium for 10 minutes until smooth in appearance. (It may be necessary to add up to an additional ¼ cup flour to keep dough from sticking)
  2. **Alternately, you may also mix ingredients by hand until well combined, and then knead dough on lightly floured surface by hand for 10 min.**
  3. Remove from bowl and shape into a smooth ball. Place dough into well oiled bowl (I use the same bowl) , cover with a tea towel and place in draft free place to rise for 45 - 60 minutes or until almost doubled in size.
  4. Cut two 13 inch rounds or squares of parchment paper. Remove dough from bowl and divide in two. Place each piece on parchment and press and stretch each until you have roughly a 12 inch circle. Transfer each (including parchment) to a 12 inch pizza pan and top with desired topping. {At this point we always freeze one of the pizzas - for next - by covering entire pan with plastic wrap, followed by aluminum foil and placing the pan in freezer. Thaw completely before baking.}
  5. Bake at 375 degrees for 15 minutes, add grated cheese if using and bake an additional 5 minutes. Remove from oven, slice and enjoy.
  6. **I warm bowl by placing it in barely warm oven or fill bowl with hot water, empty water & towel dry. My bowl is metal and I find by warming it, the temperature of the ingredients stays constant longer. However, this is an optional step.
