Was it just me, our did you find this past winter really long too? Thankfully, when I look out my windows now, I’m starting to see some signs of life!  Fresh green grass is sprouting up on the lawn, there are buds on the trees and the temperatures are now consistently on the plus side of the thermometer!

Spring is finally here and everyone is starting to make plans for the warmer days ahead. The coming weeks are filled with many special occasions and family gatherings, and Canadian Turkey is here to show you how to create spectacular meals that will wow your crowd while still being easy to prepare.  

Breakfast Hash

I love how they can help you find ways to plan ahead and let you in on tips and solutions to make entertaining and everyday meal planning easier so you can spend more time enjoying the day. Turkey is an excellent option for upcoming occasions like Easter, Passover, Mother’s Day, Victoria Day, or Father’s Day, and it’s perfect for festive family gatherings like spring communions, confirmations, graduations, and weekend brunches and suppers.

When planning for upcoming special events, getting organized and keeping things simple will allow you to spend more time mingling with family and friends and help you enjoy these get-togethers.  Cooking a whole roast turkey will easily feed a large group of people, and makes a beautiful and festive presentation.  You can accurately predict how much food you will need per person and how much time you will need to cook it.  And once your turkey is roasting in the oven, you’re left with precious free time that you can use for additional meal prep if you need it, or you can join your guests and enjoy the day.  

A whole turkey will provide the centrepiece for your meal, but what about sides?  You can easily save time in the kitchen by making side dishes ahead of time that can be reheated without compromise.  Add some quick-to-prepare appetizers and a dessert and you will have a feast on hand with little fuss.  You can also choose side dishes and appetizers that can be served cold or at room temperature.  This will allow you to prepare before guests arrive and make sure your meal is worry-free.

Breakfast Hash

A roast turkey is surprisingly easy to prepare!  There are only a few basic and easy steps to ensure a perfectly cooked, moist and tasty dinner.  You can certainly get a little more creative with different stuffing recipes, rubs and marinades, but if you are short on time or like to keep things simple, a basic recipe of seasoning and olive oil does a delicious job.  A busy cook will love how easy it is to prepare a whole turkey – just prep and season it and then let your oven do the work.  With the addition of some rice or potatoes and a few vegetables on the side, you have a complete meal that will impress all your guests.

4. Boost your nutrients! Turkey is packed with nutrients like vitamin B12 (important in keeping your nervous system – the body’s electrical wiring – working well), selenium (an antioxidant mineral) and zinc (for a strong immune system).
5. Bump up the protein! Eating 20 to 30 grams of quality protein with all of your meals, along with being active, can help build and maintain muscle.  Protein delivers hunger-curbing satisfaction to keep you energized for longer.  Turkey is the power protein of choice – it’s an excellent source of high-quality protein with each 100-gram portion serving up about 30 grams of lean protein.

Skillet Turkey Breakfast Hash

Ingredients

  • 2 lbs turkey sausage
  • 2 tbsp vegetable oil
  • 2 cups zucchini diced
  • 1 1/2 cups peppers diced
  • 2 cups potatoes cubed
  • 1 cup red onion sliced
  • salt & pepper to taste

Instructions

  • Remove sausage meat from casings. Cook over medium heat until browned and cooked through, breaking up into chunks. Set aside.  (You can also cut sausage into 1-inch slices).
    In a non-stick skillet, heat oil. Cook potatoes until fork tender and cooked through, 12-15 minutes (cook time will depend on size). Remove from pan, season with salt and pepper. Set aside.
    Add onions and peppers. Sauté until lightly browned and cooked through, 4-6 minutes. Lightly season with salt and pepper while cooking. In the last 2 minutes, add zucchini and continue to cook with peppers and onions until slightly softened.
    To assemble hash; combine turkey sausage, potatoes, onions, peppers, and zucchini.
    Breakfast Hash

TIP: Feel free to get creative with the ingredients in this dish. Mushrooms, eggplant, leeks or tomatoes are great options. You can also add in some grains like rice or wheat berries. Plan for leftovers! This dish tastes great at room temperature and makes a fantastic lunch the next day.

      Love all recipes using Turkey! I cook a full turkey at least 4 times a year! It is great as you can use the turkey in so many ways, soup, regular turkey, potatoes & gravy, hot turkey sandwiches, turkey stir fry, & many more dishes, I also buy just the turkey legs, turkey sausage just the turkey breast?.great no fuss & a great nutritious meal in no time!       We had Turkey for Easter Dinner last night and will have the leftovers again tonight, my son and his family. I make a Turkey Soup from my Turkey bones and even chicken carcasses if I have any. I have quite a few in the freezer now so with the turkey from last night I can make a big batch. Turkey Soup is my favourite spring meal.

      I would love to try: BOUNTIFUL BREAKFAST BOWL WITH TURKEY SAUSAGE. My wife doesn’t eat a lot of meat but she loves turkey. This would help curb her breakfast sausage cravings.
