When I look back, it honestly feels like just a couple weeks ago that we were relaxing outside on our deck. Right now that same deck is covered in many centimetres of snow!

5 Ways to Entertain with Ground Turkey

1. Season ground turkey mix with your favourite spices while cooking.  Store cooked portions in freezer bags for a quick start when needed.
2. Use seasoned cooked ground turkey, a little bit of your favourite cheese, and jalapeno jelly in puff pastry pockets or puff pastry shells for a quick appetizer.
3. Cook seasoned ground turkey with canned tomatoes to make a base for individual servings of pasta or chilli that can be made ahead of time and warmed up for a hot dish to serve when guests arrive.
4. Combine seasoned cooked turkey and taco spice to make a base for self-serve mini tacos or burritos.  Make a do-it-yourself serving station by setting out various toppings.
5. Use ground turkey to stuff mini veggies like cherry tomatoes or miniature peppers.  Top with a little bit of sour cream or crème fraiche.

Turkey Taco Party Cups

Ingredients

  • 2 lbs ground turkey
  • 1 Tbsp olive oil
  • 1 cup minced onion
  • Salt and pepper to taste
  • 2 Tbsp taco seasoning
  • 1 cup crushed tomatoes 
  • 3 large tortillas cut into squares
  • 1/2 cup sour cream
  • 6 cherry tomatoes sliced
  • 12 jalapeno slices *optional
  • 1/2 cup Mexican cheese *optional

Instructions

  • Heat olive oil over medium heat in a skillet.
  • Sauté onions for 4-6 minutes until lightly browned.
  • Add ground turkey.  Season with salt and pepper to taste.  Sprinkle with taco seasoning.
  • Cook until lightly browned and cooked through, 8-10 mins.
  • Add tomatoes and stir to combine.  Cook an additional 2 minutes.
  • Set aside to cool.
  • Spray a muffin tin with non-stick cooking spray.
  • Take each piece of tortilla and press into muffin cups to create a cup.
  • Bake for 10-12 minutes until browned and crispy.
  • To assemble: place 1 1/2-2 tbsp of ground turkey mixture into each cup. Top with 1-1 1/2 tsp sour cream, cherry tomato slices, jalapeño slices and cheese. Serve at room temperature.
  • TIP: You can make the ground meat up to 3 days ahead and store in the refrigerator.  Feel free to serve with alternate toppings; shredded lettuce, avocado pieces, cheddar cheese or salsa.
