Kellogg’s Vanilla Mocha Fudge

I have found myself in a bit of a Christmas baking rut; so last week I went through my recipes and cookbooks searching for inspiration…nothing!!  Then I remembered a little recipe booklet that was included in a holiday goody box I had recently received from Kellogg’s and…BINGO!!

I found a recipe for Kellogg’s Vanilla Mocha Fudge, it looked delicious and different from what I usually make, just what I was searching for!   I think this fudge turned out great and the flavour is amazing!  {I made one small adjustment to the original recipe as noted below}*

Ingredients
  • 5 tsp (125 ml) instant coffee granules (decaf)
  • 1 tsp (5 ml) vanilla
  • 1 pkg (350g) or 2 cups/500mls semi-sweet chocolate chips
  • 1 can (300 ml) sweetened condensed milk
  • ⅔ cup ( 150 ml) Rice Krispies Vanilla Flavour cereal
  • 1 pkg (225g) white chocolate chips
  • ⅓ cup (75 ml) icing sugar
Instructions
  1. Dissolve instant coffee in 1 tbsp (15 ml) boiling water. Stir in vanilla.
  2. Melt semi-sweet chocolate chips in medium bowl in microwave or in a bowl placed over a saucepan of boiling water. {I find the boiling water method the best} Stir until smooth. Stir in (175 ml) ¾ cup sweetened condensed milk and 4 tsp of coffee mixture until smooth and glossy.
  3. Stir in cereal. Spread in 9″ square baking pan lined on the bottom and sides with foil. {I used parchment paper and it also works well}
  4. Melt white chocolate chips in medium bowl in microwave or in a bowl placed over a saucepan of boiling water. Stir until smooth. Stir in icing sugar and remaining coffee mixture {I also added the remaining sweetened condensed milk}*. Spread over chocolate layer in pan.
  5. Refrigerate 3 hours or until firm. Lift out of pan, remove foil and cut into squares. Store in covered container.

These yummy pieces of dual-coloured fudge have a great texture and a delicious mocha flavour. Now, if I can just find a good hiding place for them… !!

    Wow, those look yummy! I’ve been doing some Christmas baking too, but try not to make something like that unless I have somewhere to take it (otherwise I’d eat it all myself!!!). Thanks for sharing!

    • Thanks for the pin Paula, they turned out really well. If you make them I would definitely suggest adding the remaining sweetened condensed milk, I found the mixture too thick otherwise. Good luck with your marathon day of baking, we’re having one here on the 23rd!!
