English Muffin Breakfast Sandwiches

Many of us have had an English Muffin Breakfast Sandwich at a local drive-thru restaurant. They're super convenient, especially in the car, as they provide a quick, filling breakfast in one small, manageable package. And, the only utensil required is your hand! While I often eat the sandwiches at the drive-thru restaurants when travelling, I much prefer to make them myself when we're home. Making them yourself means you can customize the ingredients, plus they're healthier...well, … [Read more...]

The New “Must Try” PC Insiders Collection

It is mid-March and even though...THIS...happened overnight, I am still hopeful that spring is on the way! The days are getting longer, the temperatures are getting into the "plus" column and the sun is starting to emit some heat...not a lot of heat, mind you, but definitely things are warming up. I have even seen some brave robins flying among the trees in our backyard. I don't know about you, but I am longing for barbecues, beaches and sipping a glass of something cold on the back … [Read more...]

Parmesan Crusted Baked Haddock

Even though we live on the coast of the Atlantic Ocean, we don't eat as much fish as we should. Kind of ironic isn't it? Well, we have tried to remedy this and have recently made this recipe for Parmesan Crusted Baked Haddock, not once, but twice. It is that good! It's really easy to make too. You just put a few simple ingredients in  a bowl, give them a stir, spread over the fish, top with some crumbs, bake and voilà, a delicious main. Just add a starch (we did oven roasted potatoes, may as … [Read more...]

How to Make Pesto

Making your own basil pesto is very easy and the taste is beyond anything you will ever find in a jar.  Don't get me wrong, I don't always have fresh pesto on hand and have used the jarred type on many occasions.  It tastes good and does the job, but it is NOT homemade!  Homemade pesto is so delicious and fresh tasting.  Once you have made your own, you won't want to use jarred again. If you grow basil or have access to big bunches from a farmers market or a friend's garden,  I highly … [Read more...]

Pudding Chocolate Chip Cookies {Recipe}

Pudding Chocolate Chip Cookies ~ I have had this recipe for what seems like forever!  I think I got it from my mom, but I am not sure where she discovered it or its initial origin.  I do remember when we were kids we often had pudding for dessert.  Because of the somewhat unusual addition of a pudding mix to these cookies,  I suspect the recipe may have come from a pudding company. Perhaps, at one time it was written on the package itself or found in a magazine or product insert. … [Read more...]

No Fail Pie Crust

Lately, I haven't been making as many pies as I once did.  Probably related to two things, first, I'm certainly more health conscious than I was 20 years ago.  And,  lets face it, with a cup of shortening/butter/lard in one double crust pie, it doesn't matter if the filling is all carrots, quinoa and celery, it could never be considered a health food.  However, sometimes healthy just isn't the priority...comfy and homey is, and a pie certainly fits that criteria.  Secondly, now that I'm a … [Read more...]
